My firstborn has a passion for anything Pumpkin. Pumpkin Cake Roll, Pumpkin Muffins, Pumpkin Pie, Pumpkin Pan- cakes....even a Pumpkin Blizzard from Dairy Queen once, when we were travelling! (Wonder if they make that every fall? It was really good!)
I can't quite bring myself to make Pumpkin things in summer....but now it's time to start. In celebration of the arrival of Fall (which is hard to believe, since it's still in the 90s here!), we made Pumpkin Muffins today. Spicy pumpkin mini-muffins with a yummy cream cheese filling.
They are a huge hit anytime we make them. You gotta try 'em. Similar to Pumpkin Cake Roll, but a little easier to make and eat.
